Fried Apples

  Amount  Measure       Ingredient -- Preparation Method

     1/4           cup  butter

  4              whole  Granny Smith apple -- peeled, cored and chopped or sliced

     1/4           cup  brown sugar -- packed

  1           teaspoon  cinnamon

 

Melt butter in a skillet on medium heat.

 

Add apples and fry until they are beginning to become tender

 

Add brown sugar and cinnamon--adjust the amounts of each to suit your family's tastes.

 

Mix well and continue to fry until the apples are completely tender and the brown sugar is starting to carmalize.

 

Remove from heat and serve immediately.

 

Description:

  "Good as a side dish or as a fruit dessert."

Serving Ideas : It is an excellent side dish to any pork recipe, but then it does well with other meats as well.  I have used it both as a side dish and a dessert, to fill turnovers, puff pastry, over shortbread, or topped with a dollop of whipped cream.  Once cooled it also makes an excellent icecream topping.

 

NOTES : Any apple can be used for this recipe, but my family prefers a tart Granny Smith apple. I have often used dried apples rehydrated to make this side dish for my family.

 

It is also a good mixture to use in turnovers, or on top of pancakes and waffles.

Fruit Bowl Sundae

     1/3           cup  Whipping cream

  2        tablespoons  Chocolate syrup

  2              whole  Oreos -- crushed

  2             medium  bananas -- sliced

  1                cup  strawberries -- sliced

  2        tablespoons  shredded coconut -- toasted

  2        tablespoons  nuts and seeds -- optional

 

In a chilled mixing bowl whip cream until soft peaks form.

 

Fold in chocolate syrup and cookie crumbs gently.

 

Arrange fruit in a dessert bowl then top with dollops of the chocolate mixture.

 

Sprinkle with coconut and/or nuts/seeds.

 

Serve immediately.

  "A twist on the standard banana split."

NOTES : There is no ice cream in this sundae, but you could serve it on top of ice cream if desired.

 

I have also done a variation of this where I simply used whipped cream with mini chocolate chips stirred in on top of the fruit.
