WEEK #1- MEATBALLS MASTER MIX

                           Meatball Master Mix

Serving Size  : 80  
Categories    : Ground beef, chicken, lamb or pork.
  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
  4        pounds  ground beef
  2        whole  eggs -- slightly beaten
  1        cup  bread crumbs -- dried

1/2        cup  onion -- finely chopped
  1        tablespoon  salt, OR to taste
  1        teaspoon  pepper
  2        cups  milk
1/4        cup  parsley flakes
Mix all together well. Form into 1 1/2 inch meatballs. I use a small cookie scoop to do this.
Place on foil lined and sprayed cookie sheet with sides.
Bake at 375 F for 25-30 minutes or until done.
Cool and package for freezing or canning.

  "The basic all purpose "baked" meatball used in numerous recipes at our house. We like to eat them plain on the day they are made and then in a variety of recipes at future dates"

FOOD STORAGE IDEA:

Package in recipe size containers and either freeze or can per USDA guideliens for future meals.
