CURRY POWDER

  Amount  Measure       Ingredient -- Preparation Method

  2          teaspoons  mustard seed
  2          teaspoons  fenugreek seed -- OR Celery seed
  4        tablespoons  ground coriander
  4          teaspoons  cumin powder
  4          teaspoons  turmeric
  2          teaspoons  ground cardamom
  2          teaspoons  mace
  1           teaspoon  cinnamon
  1           teaspoon  pepper -- freshly ground
     1/2      teaspoon  ground ginger
     1/2      teaspoon  cayenne
     1/2      teaspoon  ground cloves
     1/2      teaspoon  ground nutmeg

Briefly roast the mustard and fenugreek seeds in a 300 degree (F) oven. Then pulverize to a powder

Mix the powder in with all the other ingredients very well.  Store in a labeled airtight container.
