                              PICKLING SPICE

  1         tablespoon  mustard seed
  1         tablespoon  fenugreek seed
  1         tablespoon  dill seed
  1         tablespoon  whole corriander
  1         tablespoon  celery seed
  1           teaspoon  dried ginger root -- diced
  1           teaspoon  whole allspice
  1               inch  cinnamon stick -- broken up
  2              whole  bay leaves -- crumbled
     1/2      teaspoon  black peppercorns
     1/2      teaspoon  whole cloves
     1/2      teaspoon  hot red pepper flakes

Combine all the ingredients and store in a labeled airtight container.
